As I write this, I've got a couple of potatoes baking in the oven. Once they're ready, we're going to have them with baked beans and grated cheddar. We're not having this because it's easy or because it's cheap but because it's exactly what we want to eat. The fact that it requires minimal effort and is unbelievably frugal is just a happy coincidence.
How it's done.
Preheat the oven to 200C. Take one big floury potato per person. Roll it around in olive oil (no point in using your single estate extra virgin for this) and salt (I used crushed maldon sea salt, but then I'm posh. Ordinary salt will do). Prick several times with a knife and put in the oven. It will take at least an hour.

Chuffing brilliant. I'm facing into several months of life without a kitchen and trying desperately to think of microwaveable things that don't taste of plastic and won't turn my arteries into the Port Tunnel.
I had totally forgotten about baked potatoes. They are now on the list. In fact, they make it a list, since Avonmore soup was the only thing on there so far.
More microwave and raw food recipes, please.
